Notarization of a document doesn't make it legal. All the notary signature and stamp means is that they witnessed the signature of ';Jane Doe on July 1, 2008';.
Notaries are not legal experts nor lawyers, that is why it doesn't make the document legal, b/c they cannot legally speak to the document or whether it's valid or not.
I would encourage you to go through a real estate attorney for the lease so they can also educate you on how to evict, the proper way to collect a deposit, records you need to keep, etc.
